The truffle search: from the truffle pig to the truffle dog<\/h3>\n[\/vc_column_text][\/vc_column_inner][\/vc_row_inner][vc_row_inner column_margin=“default“ text_align=“left“][vc_column_inner enable_animation=“true“ animation=“fade-in-from-bottom“ column_padding=“padding-10-percent“ column_padding_position=“top-bottom“ background_color_opacity=“1″ background_hover_color_opacity=“1″ column_shadow=“none“ column_border_radius=“none“ width=“1\/1″ column_border_width=“none“ column_border_style=“solid“ delay=“90″][vc_column_text css_animation=“none“ css=“.vc_custom_1530043118635{margin-top: 20px !important;margin-bottom: 5px !important;}“]In time, pig it\u2019s always been a trademark of prosperity and abundance, but in past it was also the symbol of the search for truffles.<\/p>\n

Even nowsaday, when I\u2019m telling my truffle discoveries, someone asks me if research still\u00a0made via pigs.<\/p>\n

This was possible in Italy until\u00a01985, until that date, there was the Law\u00a0n\u00b065 of 17 July 1970 which read: \u201cThe research for truffle must be only with dogs and pigs\u201d.<\/p>\n

This persistent and widespread belief of discovery of the truffle with the pigs increased even thanks to France, the country with more dedication to truffles\u00a0(after Italy), even nowsady it\u2019s allowed search for truffles with pigs\u00a0and it\u2019s not rare to see video or pictures in TV\u00a0depicting them in this kind of activity.<\/p>\n

In Italy\u00a0this practice were so popular\u00a0mostly in the south and in north central, where lands are more comfortable.[\/vc_column_text][\/vc_column_inner][\/vc_row_inner][vc_row_inner column_margin=“default“ text_align=“left“][vc_column_inner enable_animation=“true“ animation=“fade-in-from-bottom“ column_padding=“padding-10-percent“ column_padding_position=“top-bottom“ background_color_opacity=“1″ background_hover_color_opacity=“1″ column_shadow=“none“ column_border_radius=“none“ width=“1\/1″ column_border_width=“none“ column_border_style=“solid“ delay=“120″][vc_column_text]\n

The history of the truffle pig<\/h5>\n[\/vc_column_text][vc_column_text css_animation=“none“ css=“.vc_custom_1530043164815{margin-top: 20px !important;margin-bottom: 5px !important;}“]Even today grandparents told stories about truffle hunters that were to the livestock markets, they tried the pigs hiding in the end of their rod, a scented truffle, and they bought the female who reaches his rod for first.<\/p>\n

This \u201cnatural selection\u201d was done without the knowledge of the seller: a pig\u00a0able to find truffles\u00a0was a precious pig so it would be more expansive for the truffle hunter!<\/p>\n

The pig, mostly the sow, was conducted in truffle-beds\u00a0with a rope tied around his neck or a leg.<\/p>\n

Each time his nose had intercepted the scent of truffles, the pig would begin to dig with its muzzle, regardless of what it found on the ground.<\/p>\n

His look was not targeted, it was rather a kind of plowing: it\u00a0ripped roots, mushrooms, it found unripe truffles\u2026 after all was more a damage than a gain, in addition to this there was the truffle hunter\u00a0\u2013 and it happen even today\u00a0\u2013 who doesn\u2019t had care to refill and cover the holes.<\/p>\n

Another negative aspect was due to its size: until a pig was lillte it was easy to condcuct it, but when it becomed adult it was really hard.<\/p>\n

Lastly: it was really difficult to stop the pig and pull away the truffles from its mouth once unearthed!<\/p>\n

We can say in time when the research happens with pigs we could call it \u201ccollection\u201d more than research \u00a0\u2013 it was like collect potatoes!\u00a0\u2013\u00a0with the dog we can start talking about research, a real discovery.<\/p>\n

From the truffle pig to the truffle dog<\/h5>\n[\/vc_column_text][vc_column_text]The dog signals the exact point where the truffle is, it waits for you and it observe you while you\u2019re finding it, tasting the scent of the truffle,\u00a0wating for its reward.<\/p>\n

Dog isn\u2019t anymore an object, it\u2019s a subject as the truffle man, both actors, rather protagonists of this magical and mysterious action, full of emotions and charms, interweaving the stolen glances, whispered words,\u00a0wags, licks and pats.<\/p>\n

Undescrivable moments,\u00a0full of joy, love, satisfactions and delusions.<\/p>\n

The search for truffles as an exaltation of the union between man and dog, became in time\u2026 man\u2019s best friend.<\/p>\n
