How to clean truffles
Sometimes, at fairs, people ask us how to clean the truffle. Some people even would use it dirt, they fear of losing the fragrance, or ruin it. The right way to revitalize their flavour is to wash them with a brush under a cold water jet.
Important: in this operation, don’t leave the truffle soaking and don’t scratch too strong; specially with the White Truffle which is more delicate. Once cleaned from the soil, it must rest for about 10 minutes wrapped in some blotting paper and it’s finally ready to be used in our dishes. We recommend you to perform this operation only when you’re going to eat the truffle because the soil around it, during storage, preserves flavour and taste.
